Here stands out the most for me personally, as visiting here was yes hard to get too, however its the home of some of the finest ham Spain has to offer.
also northern Extremadura is now the home of Pimenton (Paprika) a really fine spice and can go with anything.
To get here, I would probably recommend flying to Madrid and renting a car to drive south westwards via the A5 as this would probably be the easiest option for you. however this all depends on where you're coming to Spain from and what best for you.
